Hacemos un volcán de harina en una superficie plana.

- Ya que se incorporen todos los ingredientes amasa por 20 min hasta que la masa sude la mantequilla.
Lo dejamos reposar hasta que doble su tamaño en un bowl engrasado.
Precalentamos el horno a 180°C.

- Cortamos la masa en bollos de 120gr y les damos forma. En caso de no tener papel engrasado enharina una charola.



- Dejamos doblar de tamaño los bollos y les agregamos una capa de huevo, ajonjolí y los dejamos por 25 min en el horno.



- Preparamos la carne. Le agregamos la cucharada de sal pimienta. Pesamos la carne y hacemos medallones de 200 gr.



- Caramelizamos la cebolla con 20 gr de mantequilla.



- En el mismo sartén freímos las rebanadas de tocino. Partimos los bollos a la mitad y les agregamos una ligera capa de mantequilla.



- Mientras doramos el pan cocinamos la carne, la tapamos para que se cocine por dentro la carne pero no tanto para dejar la carne en un termino 3/4.



- Dejamos que dore de ambos lados y le agregamos una rebanada de queso manchego.


- A la capa de abajo del pan le añadimos mostaza, capsut y a la capa de arriba mayonesa. Por encima de la carne agregamos 2 rebanadas de tocino, cebolla caramelizada, lechuga y 2 rebanadas de tomate bola.


- Cerramos y emplatamos.
