- para preparar la carne:
- 1 kilo carne de puerco maciza. Para cocinarla se requieren los siguientes ingredientes:
- al gusto sal
- al gusto pimienta
- 1 chorrito aceite vegetal
- 2 hojas laurel
- c/n mejorana
- c/n tomillo
- 1/4 cebolla
- 3 dientes ajo con cáscara
- 2 clavos
- 1 pizca orégano
- para el relleno:
- 1 chorrito aceite de oliva
- 1/4 kg jitomate asado y picado
- 1/4 kg cebolla finamente picada
- 5 dientes ajo finamente picados
- 5 duraznos criollos, pelados y cortados en trozos medianos
- 1 pera criolla pelada y cortada en trozos medianos
- 1 Manzana rallada, pelada y cortada en trozos medianos
- 1 puño pasas
- 1 puño almendra fileteada
- 1 puño arándanos
- 1 lata (250 gr.) puré de tomate
- 1 1/2 taza vino blanco
- Al gusto sal de grano
- para la nogada:
- 1/4 kg nuez de Castilla pelada. (Para que no se oxide una vez pelada, dejar remojando en leche)
- 150 gr queso cotija
- 250 ml. crema agria
- c/s leche a tapar las aspas de la licuadora
- 1/4 cucharadita canela molida
- 1/4 taza Jerez dulce
- 2 cucharadas azúcar o al gusto
- 12 chiles poblanos pelados y desvenados
- 2 granadas desgranadas
- 3 ramitas perejil, finamente picado

- Se lava la carne, se seca y se pone en una cacerola a fuego bajo a que se selle. Se agrega un poco de sal de grano y pimienta, se deja dorar un poco, si no suelta grasa, sugiero poner un chorrito de aceite y dejar dorar un poquito. Se agrega suficiente agua, pimienta gorda, mejorana, tomillo, laurel, cebolla, ajo, clavo, orégano y sal de grano. Se tapa y se deja cocer hasta que la carne esté suave.



- Preparando el relleno: se pican el ajo y la cebolla finamente. En una cacerola se agrega un chorrito de aceite de oliva, se agrega el ajo, cuando cambie de color, agregar la cebolla y se deja freír hasta que esté transparente, se agregan las almendras, las pasas, el jitomate y el puré de tomate, sal y se deja sazonar.

- Se escurre muy bien la carne y se corta en trocitos. Se agrega al jitomate se deja cocinar unos minutos y se agrega el vino blanco. Se sigue cociendo todo. Fuego bajo.


- Al final se agrega la manzana, pera y durazno se deja cocer, hasta que la fruta esté suave y se consuma el líquido.

- Los chiles se lavan, se asan al fuego, se meten en una bolsa de plástico para que suden, se pelan y se desvenan.


- En la licuadora se pone la leche hasta tapar las aspas, agregar todos los ingredientes, licuar muy bien. Si está muy espesa agregar un poco de leche, lo dulce es al gusto.


- Se rellenan los chiles con la carne (de preferencia que esté caliente), se bañan con la nogada y se adornan con la granada y el perejil.
